November 12, 2007

Sorbic acid (2,4-hexadienoic acid) was first discovered in 1816 from the fruit of the rowan plant (genus Sorbus).Today, sorbic acid and its salts (called sorbates) are widely used as preservatives in food, and are often used in cheese to prevent mold growth after the cheese is made.
