Alyson Mitchell

Dr. Mitchell received her PhD in Pharmacology and Toxicology 1996 at the University of California Davis where she is a Professor of Food Chemistry and Toxicology in the Department of Food Science and Technology. Her currently research interests focus on elucidating basic chemical reactions and changes in composition that occur in fruits, vegetables and nuts as a result of plant breeding, pre- and post-harvest processes; identifying and quantifying target and nontarget secondary plant metabolites for authentication, safety and biological relevance; and developing methods for the characterization and mitigation of chemical carcinogens developed during food processing.
