Two forms of coconut combine with more tropical fruits for a creamy ode to summer.
2 cups seedless watermelon
1 cup crushed pineapple
2 tablespoons shredded coconut
1 cup coconut milk or coconut cream
2 cups mango, guava, or passionfruit juice
Sugar or other sweetener (optional)
1. Grate watermelon.
2. Combine watermelon, pineapple, coconut milk, and shredded coconut in a pitcher.
3. Stir in juice; add sugar, if desired.
4. Divide among glasses.
