cis-Pellitorin is a pungent flavoring agent isolated from the tarragon plant (Artemisia dracunculus L.). It is used to give a prickly, “hot” taste to foods and oral hygiene products. A synthesis of cis-pellitorin is described in US Patent 7,511,178, March 31, 2009.
